Pickle soup is one of my favorite soups. Therefore, when after separating the mutton meat from the bone for the vats, I left a lone bone, I boiled it and decided to make a pickle with rice, although all recipes use either chicken or beef. And contrary to many opinions, my soup turned out to be amazingly tasty (judging by the empty plates).

Ingredients

To prepare pickle with rice you will need:

lamb bone;
potatoes - 4-5 pcs. medium;
rice - 20-30 g;
carrots - 1 pc.;
onion - 1 small onion;
leeks - the white part;
pickled cucumbers - 2 pcs. large;

olive oil - for sautéing;
salt, spices - to taste;
bay leaf - 1 pc.
peppercorns - 7-8 pcs.
sour cream and herbs - for serving.

Cooking steps

Prepare broth. For this in cold water put the lamb bone and cook until the meat is tender.

Remove the bone, rob the meat, if any.

Put rice in boiling broth (I had a mixture of three types of rice),

bring to a boil, dip the diced potatoes into it. Cook for 10-15 minutes. Meanwhile, sauté the finely diced cucumbers.

Add the entire passivation to our soup. Send meat there. To taste, add pickle from cucumbers if necessary (I added). Cook the pickle until rice and potatoes are cooked. Before turning off the heat, add the dill (I added dried), take a sample for salt. If desired, add spices (I did not add, since the soup was already rich).

  3. After 3 hours of cooking the broth, we begin to saute vegetables: onions - cut in half rings, carrots - grated, pickled cucumbers - you can remove the seeds and peel them.
  4. After 3.5 hours of cooking the broth, send the potatoes into it and add some salt.
  5. When the potatoes are cooked, we send the browned vegetables and check the pickle for salt.

We cook the meat until it is very soft, we also check the pearl barley for readiness.

It seems to me that there are as many recipes for pickle as there are recipes for borscht: each housewife has her own. Pickle, as a rule, is boiled on meat broth, but someone likes lean pickle.

The recipe is for a 2.5 liter saucepan.

To prepare pickle with barley and pickles on lamb, we will prepare the products according to the list.

Put the meat in a saucepan, add onion and carrots, fill with water and cook until the meat is cooked, not forgetting to remove the resulting foam. To be honest, I don’t remove the foam, then I filter the broth through a special napkin.

How long the broth will be cooked - I will not say. It all depends on the meat. Try it, see for yourself.

After preparing the broth, discard the vegetables.

When the broth is cooked, we prepare the necessary products.

Cut the potatoes into cubes, rinse the cereals, spread them to the potatoes.

Fill with broth and cook until the potatoes are tender. The groats, as a rule, have time to cook during this time.

While the essence is yes, we are preparing a gas station. We cut the vegetables, fry on sunflower oil... Then add medium-sized chopped pickles to them and fry them all together for a couple of minutes.

When the potatoes and cereals are cooked, add the dressing and the boneless meat. Let's boil it for a few minutes.

At the end of cooking, salt and pepper to taste, add a little brine. Season with finely chopped herbs.

pearl barley - 1 glass (ready-made.)
potatoes -300-400 gr (weight of the refined product.)
cucumber pickle - 1 liter. (my pickle from home cucumbers, not cool ... if the pickle is from store cucumbers, 2 glasses are enough.)
greens, salt, pepper - to taste.

1. put the broth to boil. the meat should be covered with water. bring to a boil, remove the foam and simmer until tender.
... remove the meat, if necessary, ready-made broth strain.
I had lamb ribs, I will use them to decorate portions of soup.

2. It's time to cook the pearl barley. I recommend boiling 1 glass of cereal. and when you bookmark, already count on the size of your pan.
I cooked barley in a slow cooker, it took 30 minutes.
the groats should be unfolded (boiled.) Throw the groats in a colander and rinse with cold water. set aside. we add it 10 minutes before the soup is ready.

3. Cut the potatoes into cubes. and send to cook in a ready-made broth. pour in the pickle from the cucumbers. but it should be just a pickle, not a pickle (that is, cucumbers should be pickled, not pickled with vinegar.)

4. We send carrots and onions to the potatoes. I don’t sauté vegetables, but if this is contrary to your convictions, then you can do frying in vegetable oil.

5. 15 minutes after laying the potatoes, it's time to cut the cucumbers into strips and send them to the broth along with the pearl barley.

6. cook the soup for another 10 minutes, you can add fresh or dried herbs (in my case, dried dill and parsley) then cut the ribs, pour the soup into plates, decorate with the ribs (you can boil an egg and put half a boiled egg directly into the bowl of soup)
