  • Garlic - 1 head;
  • Vinegar 9% - 100 ml.;
  • Sugar - 0.5 cups;
  • Salt - 1 tbsp spoon.

Step 1. We twist tomatoes, bitter peppers and garlic in a meat grinder. Cut the bell pepper into thin strips. Rub the carrots on a coarse grater.

Step 2. Cut the cucumbers into strips along their entire length. It is desirable that the length of the cucumbers does not exceed 5 cm.

Step 3. We take carrots and bell peppers and fry them for about 10 minutes.

In this recipe we need:

  • Cucumbers - 2 kg
  • Sweet pepper - 1 kg
  • Carrots - 300 g
  • Onions - 300 g
  • Tomato paste - 400 g
  • Water - 350 ml
  • Vegetable oil - 150 ml
  • Sugar - 2 tablespoons
  • Salt - 1 tablespoon
  • Bay leaf - 3 pcs.
  • Allspice - 8 pcs.
  • Ground black pepper
  • Vinegar - 2-3 tbsp

Pour water into a saucepan and add tomato paste, vegetable oil, salt and sugar. We put on fire, bring to a boil and cook for five minutes.


Add bay leaves, peppers, onions, grated carrots. Bring to a boil again and cook for 15 minutes.

Step by step cooking:

Step 1. We are preparing a large dish in which we will make lecho. Usually the pelvis is used.

Step 2. Cut the pepper into small strips and fry it in a skillet for about 20 minutes. After that, we put it in the prepared dish.

Step 3. Put tomatoes cut into four parts, cucumbers cut into rings there. Rub the carrots on a coarse grater and fry them with garlic. At the end, we put it in the dishes as well. Add overcooked onions to this.

Step 4. We mix all the ingredients, put on gas and cook.

Step 5. As soon as the lecho boils, add vegetable oil, dill, bay leaves, salt, sugar. Cook for about an hour more. At the end of cooking, add vinegar.

Step 6. When ready, pour the lecho into the jars while still hot, roll it up. We turn the cans over and set to cool.

  8. Chop the onion into thin half rings.

  9. When the tomato sauce comes to a boil, cook it for about 10-12 minutes, and then add the onions and cucumbers.

  10. Mix everything and cook the resulting mass for about 7 minutes.
  11. A minute before the sauce is ready, add the vinegar and mix again.
  12. Ready sauce can be poured into jars.

  13. In order to make it more convenient to do this, I put the jar on a plate.
  14. Pour the sauce into the jars to the very top.
  15. We cover the jars with lids and roll them up with a key.

I'll start with the mom of the popular lecho recipe. This is exactly the taste that my mother and grandmother prepared. So to speak from childhood.

There is a nuance here. The salad can be spicy if you add all the indicated amount hot pepper with seeds. If you do not like sharp workpieces, then simply remove it from the recipe, or reduce its amount by half.


Let's take:

  • 1.5 kg of tomatoes,
  • 1 kg of cucumbers,
  • 0.3 kg sweet pepper,
  • carrots - 350 g,
  • garlic head,
  • hot chili peppers - 2-3 pcs,
  • 2 tsp salt,
  • 0.5 cups sugar,
  • vinegar 9% - 90-100 ml,
  • 0.5 cups odorless lean oil.

To begin with, it is better to collect cucumbers and tomatoes just before harvesting. Rinse and remove the substandard. Spoiled or rotten fruits.

We take a meat grinder and insert a thin grate so that we do not get large pieces of pulp. We take tomatoes and cut them into pieces, eliminating hard places and stalks.

  • 1 kg of peppers
  • 4 kg of cucumbers,
  • 2 tbsp. l. rock salt,
  • 200 g sugar,
  • 0.5 l tomato paste,
  • 150-200 ml of 9% vinegar,
  • 170 ml vegetable oil
  • garlic head.

First of all, we take out the meat grinder. Its modern electric version and the manual version of the USSR times will be equally useful to us. It doesn't matter.

Wash the peppers, peel them from the core and seeds. We also peel the garlic and divide it into cloves.
We take these vegetables and twist them through a meat grinder. Put tomato paste into this mass.

We remove the tips of the cucumbers and cut them into bars.


Fill the cucumbers with the fragrant vegetable mixture. We taste and add some salt. We introduce sugar and vegetable oil.


We transfer the mass to a saucepan or cauldron and cook for 15 minutes on medium heat of the stove.

Lightweight version with tomato juice. I think that one of the easiest preparations for the winter. And the result is simply delicious, someone even called such a taste "you just lick your fingers."

Let's take:

  • 2 kg of tomato fruits,
  • 2.5 kg of cucumbers,
  • 6 onions
  • bell pepper - 900 gr,
  • 2 heads of garlic,
  • sunflower oil - 160 ml,
  • vinegar 9% - 60 ml,
  • sugar - 6 tbsp. l.,
  • salt - 2 tablespoons (70 gr).

We soak the vegetables so that they wash off quickly and easily.

We take a meat grinder with a fine grate and make tomato juice. We skip all the tomatoes, but first remove the beaten or spoiled places from them. Cut off the stalks. If the peppers are juicy, they can also be ground in a similar manner. I will do just that.


Pass the garlic there through a meat grinder. Pour vegetable puree into a cauldron and pour in vegetable oil. I take unscented sunflower. Salt and sugar to taste.


Boil the mass and cook for 10 minutes, stirring on medium heat of the stove. It will gurgle and puff, so you can cover it with a lid.

In the meantime, we cut the cucumbers into bars or circles. Depends on your preference.



Cut the onion into half rings.

We send onions and cucumbers to the tomato mass.

Prepare the rest of the food at the same time. Cut the onion into half rings and chop the garlic. We send them to the tomatoes.


Wait for boiling again and boil for 10 minutes.

Cut the cucumbers into thin circles and lower them into boiling tomatoes. We introduce sugar with salt, butter.


We wait until we see that the mass is boiling. Then we reduce the heating to medium and wait 15 minutes.


Introduce vinegar five minutes before cooking. We cover with lids so that the acid does not evaporate.

We pour lecho into sterile jars.

Delicious cucumber lecho with eggplant without garlic and without sterilization

This salad is even tastier than regular lecho. It turns out tastier and richer. The cucumbers crunch and the eggplants disintegrate in the mouth. What you need for boiled potatoes.


Let's take:

  • 1.4 kg eggplant
  • 1.4 kg tomato (juice needed),
  • 650 g cucumbers
  • 650 g sweet pepper,
  • 350 g onions,
  • 1 tbsp. l. salt,
  • 80 g sugar,
  • 220 ml vegetable oil
  • 75 ml vinegar 9%.

Let's start with the blue ones. We wash them and cut them into pieces, salt. Leave for 20 minutes, then drain the liquid. This is necessary so that bitterness comes out of the pulp. We rinse the pieces under running tap water and wring them out by hand.


Cut the cucumbers and peppers into the same neat cubes. As usual, they used to grind them into salad.



Meanwhile, we get juice from the tomatoes. Here is your flight of imagination. If you want, use a blender, juicer or meat grinder. What is at hand.

Pour the juice into a saucepan and place over medium heat. It is important for us that the mass goes into bubbles and boils.
Cut the onion into quarter rings and add to the boiling juice.


After five minutes, add the rest of the vegetables - cucumbers, eggplants and peppers.



After boiling, simmer under the lid for 20 minutes.

See how much juice will come out during the cooking process. Add salt, sugar, vinegar and lean butter to this. Add vinegar.

Cook for another five minutes. At the same time, we sterilize cans and lids.

We fill them with salad.
