Pour the boiled plum sweet mass onto oiled parchment or a silicone mat and put in an oven heated to 90-100 degrees for 4-6 hours. The oven must be ajar - I insert a wooden spatula into the door, this is necessary so that the moisture evaporates.

The finished marshmallow of plums should be elastic and not sticky. We take it off, put it on powdered sugar, cut into figures, rolled into spirals and stored in a tightly closed jar.

In a slow cooker

Required: plums 1 kg, sugar 250 g.

Pour the pitted plums with sugar, leave for 30 minutes to let the juice flow. Transfer to the multicooker bowl, set the extinguishing mode for 30 minutes. Rub the mass through a sieve or interrupt with a blender. Set the languor or multi-cook mode for 4-5 hours. Periodically, the mass must be mixed. When the puree reaches the required density (it stops dripping from a spoon, but will slowly fall in pieces), cool it to a warm state. Then transfer the mass to a container lined with cling film for further freezing. To thicken the mass, put it in the refrigerator overnight.

Remove the finished marshmallow from the container, cut into pieces, roll in sugar.

Pour the pitted plums with sugar, leave for a while so that the juice stands out. Add the juice and zest of one lemon, if desired. Cook over low heat, stirring, until the fruits are soft. Grind the plums into a puree using a blender or sieve. Boil plum puree over low heat for 2.5-3 hours until the mass becomes very thick. After that, spread it in a thin layer on a baking sheet covered with oiled parchment. Dry in the oven at a temperature of 110 degrees, with the door slightly open, until cooked. Drying time approximately 4-5 hours.

Cut the plums in half, leaving the pits intact. Place in the microwave for 10-15 minutes on full power. You should get plum porridge, which we grind through a sieve. You can add sugar to taste and lemon juice. Put the dishes with grated plums in the microwave at full power for 25-30 minutes, then reduce the power by half. Be sure to cover the dishes with a gauze cloth so that excess moisture leaves, but at the same time the mass does not splatter in all directions. Every 15 minutes, remove the plate, stirring the contents. When the puree has evaporated by 2/3 of the volume, the marshmallow is ready. Transfer the warm marshmallow to a container, wait until completely solidified.

Carefully remove the treat from the container, cut into pieces, roll in powdered sugar.

When the plum is ripe, it is sweet, you can add less sugar, or not add at all. From an overripe plum, marshmallow will dry for a very long time; it is better to mix such a plum for marshmallow with an apple.

Wash the plum, dry it, cut it into halves, remove the pits and sprinkle with sugar. Stir and leave for 4-5 hours, during which time the sour plum will absorb the sugar and release the juice.

Drain the resulting juice, and puree the plum in a blender. Spread the plum puree in an even layer about 0.5-1 cm thick over the surface of the marshmallow tray. I have one pallet in the dryer, so for the other four tiers of the dryer I cut out pallets from baking paper (we sell paper 38 cm wide, very convenient). The plastic tray should be lightly lubricated with odorless vegetable oil; high-quality baking paper does not need to be lubricated with anything.

Dry the marshmallow in a dryer at a temperature of 50-60°C. Drying time is approximately 10-12 hours. I dry for 4-5 hours, then take a break for a few hours, or overnight. Then again 5 hours of drying.

The finished marshmallow does not stick to your hands and there is no liquid in it. Pastila easily rolls up into a tube.

The marshmallow can also be dried in the oven, at the specified temperature and fan function.

Randomly cut the finished marshmallow and, if desired, twist into tubes. Store marshmallow in a well-closed container in a dark and dry place. From the specified number of products it turns out - 400-450 gr. delicious pasta.

  2. So, the plums must be washed, let the main water drain. Remove bones. The stone is easy to remove if you cut the plum along the hollow and turn the halves a little. The bone will literally pop out on its own.

  3. Put the plum halves in a small saucepan, pour in 100 ml of water.

  4. Bring the plums to a boil over medium heat and simmer until they begin to fall apart. Remove from heat and cool to almost room temperature.

  5. Next you need a blender. Use it to puree the entire gruel from the plums.

  6. Pass the resulting puree through a sieve, so the mass will become as homogeneous as possible.

  7. Transfer the puree to a saucepan, add sugar, put on medium heat to boil (do not forget to stir constantly, do not close the lid).

  8. How to determine how much more to cook mashed potatoes? It should become almost like jam, stop boiling, and begin to “spit” quite strongly. Then take the puree off the heat.

  9. Line a baking sheet with parchment, evenly oiled.

  10. With a spoon, spread all the plum puree over the parchment.

  11. Now this layer of puree needs to be dried to the state of marshmallow. Move the baking sheet into the oven, turn on the heat almost to the minimum and open the oven door a little. So the pastille will dry for at least 4 hours (depending on the oven, the process may take up to 6 hours).

  12. The marshmallow is ready when it easily peels off the parchment in one layer. Let her cool completely.

  13. Cut the cooled marshmallow with scissors into strips, roll into rolls, if desired, each can be tied with twine.
