One of the most important dishes of any New Year's holiday table is puff salad, herring under a fur coat. According to the classic recipe, it is prepared in layers soaked in mayonnaise from: potatoes, onions, carrots, beets and, of course, the herring itself. There are various variations of this dish with the addition of an apple or cheese, but today we will cook the same classic herring under a fur coat, familiar to us from childhood.

The main ingredient is, of course, the herring itself or its fillet. I prefer to use, so to speak, a natural product, rather than a semi-finished product, because the more effort and soul you put into a dish, the tastier it turns out.

The herring must be cut, the bones removed and cut into small pieces as in the photo.

Boil the vegetables in their uniforms for about half an hour until they are soft enough.

Peeling beets, potatoes and carrots is very easy, you don't even need a knife.

Put the potatoes in the first layer. To do this, grind it on a medium grater and distribute it in an even layer, and then grease with mayonnaise. Here it is necessary to make a small clarification, if you use a little mayonnaise, then the layers: potatoes, carrots and beets need to be slightly salted - I did just that.

We spread finely chopped onions on a potato pillow and also coat with mayonnaise.

The next layer is the cooked herring fillet, which must be spread over the onion in an even layer.

Boiled carrots, as well as potatoes, rub on a medium grater, put on top of the herring and coat with mayonnaise.

The final layer is grated beets, which also need to be soaked with mayonnaise and leveled as in the photo. For leveling, it is best to use a regular tablespoon.

Not difficult, affordable and very tasty!

2 medium boiled beets
1 large boiled carrot
2 medium boiled potatoes
100 gr. cream cheese (I used Creme Bonjour)
150 gr. mayonnaise
1 slightly salted herring
5 gr. gelatin

Soak gelatin in ¼ cup cold water, let it swell and dissolve it in a water bath until completely dissolved (do not boil).

Cool and mix with mayonnaise.
Grate the beets on a fine grater.


Carrots also grate on a fine grater.
Potatoes - on a large grater.


Cut the herring into pieces (having previously cleaned and removed the bones).
Lay out the cling film on the table (in several strips, preferably several layers).

Add 3-4 tablespoons of mayonnaise-gelatin mixture to the beets, mix and lay out a layer on a film (rectangular layer).
The next layer will be cream cheese, to which you also need to add 2-3 tbsp. mayonnaise-gelatin mixture.
Attention! Each subsequent layer of products should be smaller in area.


The next layer is potatoes, to which you will also add 2-3 tbsp beforehand. mixtures.
After the potatoes comes a layer of carrots (with 2-3 tablespoons of the mixture).


In the middle of the carrot layer, you need to put pieces of herring fillet.
Now carefully, holding the edges of the film on both sides (it is better that someone helps you at the moment), roll up all our layers (with a little effort).

Roll up the edges of the film. Now you need to wrap the roll in foil and put it in the refrigerator for several hours.
Cut with a sharp knife.

My comments.

  • It would be nice to put finely chopped dill on the film with the very first layer (before the beets) (this is for beauty, and tasty).
  • It is better not to cut the herring fillet into pieces, but cut into long strips along the length (this will be more convenient when cutting portioned pieces).
  • Be sure to add a little salt to the beetroot, potato and carrot layer.

Recipe 4: herring under a fox coat

The originality of this salad, in addition to the fox coat, is also given by the champignons included in its composition, which, according to the principle “do not spoil the porridge with butter”, add their characteristic aroma to the salad.

We take the products necessary for making a salad:

  • Herring (slightly salted) - 1 fish,
  • Mushrooms (frozen or fresh) -250 gr.,
  • Potatoes (boil) - 3 pcs.,
  • Carrot - 1 pc.,
  • Onion - 1 pc.,
  • Mayonnaise,
  • Vegetable oil for frying mushrooms and carrots with onions,
  • Salt.

We cook herring, for this we gut it, clean it from bones and skin.

Then cut the herring into small pieces and lay out the first layer. Can be stacked in one dish or in two (at your discretion)

Fry the champignons in vegetable oil until tender and spread on top of the herring with a second layer

Grate the boiled potatoes on a coarse grater over the mushrooms, lightly salt and grease with a thin layer of mayonnaise

Mix the grated carrots with onions and fry in a pan in vegetable oil. Then spread on top of the potatoes smeared with mayonnaise.

Purchased herring in jars is not always tasty. Then I make this salad

  • Beets (boiled) - 2 pcs
  • Herring (how much to eat, canned or salted)
  • Mayonnaise (to taste)

Peel the boiled beets and grate.

Finely chop the herring. If it is from a jar, then it is good to drain the brine or marinade.

Mix herring with beets.

Season with mayonnaise to taste. Of course, this salad did not even stand next to a real herring “under a fur coat”, but, at work or in nature, it leaves very quickly.

Recipe 6: the original herring under a fur coat from Ulrika

This recipe has been in our family for as long as I can remember, so to speak, the taste of childhood. It is juicy and not as greasy as usual, and the top layer is not the usual beetroot, but the yolk.
My mother got the recipe in the 80s, she didn’t like the usual “Fur Coat” then, and the employee treated her and says that “even those who don’t like herring eat my fur coat!”.
Oh how right she was!

So, let's get down to business:

1 layer: Herring -1 medium finely cut into cubes,

2 layer: onion - finely chopped, and now we grease it not with mayonnaise, as everyone is used to, but marinade(0.5-1 tsp of ready-made mustard, a little sugar, 0.5-1 tsp of 9% vinegar and 1 tbsp of refined sunflower oil, mix everything thoroughly), I advise you to try the marinade and adjust to your taste, since and mustard, and vinegar are different, a little sharper, a little more sour ...

3rd layer: boiled potatoes in their skins -2pcs-three on a vegetable grater and again grease not with mayonnaise, but with slightly odorless sunflower oil,

4th layer: boiled beets -1 pc - on a vegetable grater - grease with mayonnaise,

5th layer: three raw carrots -1 piece on a fine grater, grease with mayonnaise,

Layer 6: 1 apple (ideally Simerenka) or another sour apple - three on a vegetable grater, mayonnaise on top,

7th layer: whites of 2 eggs on a coarse grater, mayonnaise,

Layer 8: yolks of 2 eggs on a fine grater. Do not grease with anything.

Infused for at least a couple of hours, better overnight in the refrigerator, everything can be enjoyed

Tip: if vegetables are too juicy: beets, carrots or apples, it is better to remove excess juice, in layered salads, it can give wateriness. I rub such vegetables in a separate bowl, if they let the juice in, it can be seen for a minute or two. I never salt vegetables in the salad itself (but only during cooking), I have enough mayonnaise. Salt also contributes to such incidents.

Recipe 7: Dietary herring under a fur coat

Firstly, this dish is high in calories due to the high content of mayonnaise, eggs and fatty herring, and secondly, in this salad we will find a high concentration of salt - the first product prohibited in any diet.

All the ingredients of the modified salad are for women who prefer to see low-calorie and balanced foods in their diet.

  • - fat-free cottage cheese or cottage cheese with a fat content of not more than 2% - 100 gr.
  • - egg - 1 piece
  • - carrots - 1 piece
  • - beets - 1 piece
  • - mustard - half a teaspoon
  • - Atlantic herring, slightly salted - 75 gr.

Boil beets and carrots in their skins without adding salt;

Hard boil an egg;

Grate vegetables and an egg on a coarse grater, cut the herring into small cubes;

Lay out the products in the following layers: 1st layer - carrots, 2nd layer - herring, 3rd layer - beets, 4th layer - egg. Spread each layer with a mixture of cottage cheese and mustard.

Chill the salad in the refrigerator before serving.

slightly salted herring 1-2 pieces (depending on the guests)
4 medium sized potatoes
3-4 chicken eggs
3 medium sized carrots
3 medium green apples
3-4 beets
salt to taste
mayonnaise

Boil potatoes, carrots, eggs and beets until tender. If you have a double boiler, cook all the vegetables in it, so you save more vitamins and spend less time. herring remove the skin, fins, and bones. Finely chop the flesh of the herring.

Peel potatoes and grate on a medium grater, place on the bottom of the dish in which you will serve salad "Herring under a fur coat". Lay the chopped herring on top of the potatoes. Lubricate with mayonnaise.

Then grate the boiled carrots and lay on top of the herring, grease with mayonnaise.

The next step will be apples: grate them and lay them on top of a layer of eggs, brush with mayonnaise.
