Well, cabbage. We take it not anyhow, but with thin leaves. Better to take flat-shaped heads of cabbage.

To get an excellent taste, add more sour cream to the gravy or heavy cream.

We need:

  • Cabbage - 1 kg;
  • Chopped meat- 250-300 g;
  • Carrots - 2-3 pcs;
  • Onions - 2-3 pcs;
  • Greens (mixture) to taste;
  • Vegetable oil;
  • Black pepper and allspice to taste;
  • Paprika to taste;
  • Salt to taste;
  • Tomato juice - 1 glass (or tomato paste - 1 tablespoon).

For filling

  • Vegetable, meat broth or boiled water - 0.5 l;
  • Sour cream (15% - 20%) - 400 ml;
  • tomato and vegetable sautéing;
  • Salt to taste;
  • Greens to taste;
  • Pepper to taste.

Step 1.

How to cook cabbage rolls? Where to start? And we will start with tomato and vegetable sautéing. Three carrots on a coarse grater. Cut the onion into small cubes.

Fry all this in oil until soft and add tomato juice or paste.

Tomato paste should be of good quality and diluted with a glass of water.

After that, salt and pepper to taste. Add 1 teaspoon of sugar. Stir everything well.

Now we wash the rice well and fill it with boiling water, let it cool.

Now mix 2/3 of the passions with rice and minced meat. Add greens.

Now let's prepare the cabbage. First, cut out a part of the middle (legs). Put on a fork and immerse in boiling water for a few minutes. So the leaves will become softer and will not break. But be careful not to let the leaves become soft. This usually takes 2-3 minutes.

Now the filling. We have already mixed rice, minced meat and 2/3 of the frying with spices and herbs. Once again, you can check the taste and if necessary add spices to taste.

Prepare a tall stewpan or cauldron in which we will cook our stuffed cabbage rolls. Lubricate the bottom with oil.

Ingredients:

  • Cabbage - 2 kg;
  • Rice - 450 g;
  • Minced meat - 500 g;

For frying:

  • Onions - 320-350 g;
  • Carrots - 530-550 g;
  • Tomato paste - 220 g;
  • Sunflower oil - 70 g;
  • Water - 1.5 l;
  • Salt to taste;
  • Ground black pepper to taste;
  • Bay leaf - 2 pcs.

Step 1.

Cook rice. Rinse it thoroughly first. Then pour water well and bring to a boil for 5-6 minutes. Then turn off the heat, cover with a lid and leave to sweat for another 5 minutes.

When ready, drain the water through the drushlak, let the rice lie there so that the water all comes off.

Step 2.

On a coarse grater, three carrots, chop the onion not very finely. Fry in a pan for about 5-6 minutes. Do not forget to stir.

Add tomato paste and fry for another couple of minutes. When ready, you need to remove less than half of the frying in a separate container.

Add water to most of it, stir and bring to a boil. Add salt, pepper to taste and bay leaves. We make a small fire and simmer for 3-5 minutes.

  • large carrot;

Step-by-step recipe for stuffed cabbage without rice with meat

Having removed the top, coarsest and often damaged leaves from the head of cabbage, we dip the cabbage into slowly boiling water. For convenience, first cut out a part of the stump, making a small indentation in its place, stick a knife or fork into this place. It is advisable to pour a couple of tablespoons of vinegar into the water.

As it softens slightly, trim the bottom of the leaf and carefully remove it from the head. Be careful not to burn yourself with boiling water. Soak the cabbage for a minute or two and peel off the next layer of leaves until they are large enough to roll a small cabbage roll.

  • three hundred grams of fresh oyster mushrooms;

Applying portions of minced meat with a spoon, we first fold it into a roll, then simply fill the delicate edges of the sheet with our fingers inside the tube. We start the multicooker in frying mode, heat up the oil and put stuffed cabbage in it, without covering, fry until blush and turn over. Chop the other half of the onion into small pieces and sprinkle with cabbage rolls.

Finely chop the thawed squid. Stir sour cream with flour and a glass of water. Pour the sauce to the cabbage rolls, lower the lid and simmer for exactly five minutes. We fall asleep and stir the squid in the sauce, salt and pepper, lower the lid again and heat it up for exactly three minutes, after which we take out the bowl and put it on a stand or cutting board.

To be honest, I rarely cook stuffed cabbage rolls. But today, inspiration came to me and decided to cook cabbage rolls in a slow cooker. I have a multicooker with a pressure cooker function, so cabbage rolls are not cooked for a long time, the preparatory process takes more time. The peculiarity of these cabbage rolls is that rice was not added to the minced meat, rice was replaced by cauliflower.

Cauliflower compensates for the lack of rice, it just needs to be crumbled into small inflorescences and added to the minced meat. If you stick to a diet and watch your weight, then the rice, which we usually add to minced meat, is better to replace with cauliflower, or brown rice, which is much healthier than white.
