  • granulated sugar - 200 g;
  • vegetable oil - 200 g;
  • 9% vinegar - 100 g.
  • zucchini - cubes;
  • tomatoes and garlic - in a meat grinder;
  • pepper - straws.

Put chopped zucchini and tomatoes in a saucepan, add vegetable oil, sugar, salt. Simmer for 20 minutes on low heat, add pepper, garlic, pour in vinegar. Simmer for another 20 minutes.

It will turn out to be about 4 kg of finished Uncle Bens.

Uncle bence with curry

This salad recipe is for those who like it spicier.

Put curry, butter, salt, sugar in a saucepan and bring to a boil. Boil the zucchini in this marinade for 10 minutes. Add onion and pepper. Cook for another 10 minutes. Add the garlic and simmer for another 2 minutes.

Very spicy

This zucchini sauce has a special taste - very spicy and at the same time sweet and sour. Reduce the amount of pepper and garlic if desired.

Place spices, butter, sugar, salt in a saucepan until boiling. Lower the zucchini. Cook for 10 minutes. Add onion and pepper, boil for 10 minutes. Add the tomatoes and simmer for another 10 minutes. Put the garlic 2 minutes before the end of cooking.

With Krasnodar sauce

Krasnodar sauce adds a special piquancy to the general bouquet of Ankle Bens flavors: it contains allspice, nutmeg, and cloves. But the most important thing is that it is based on apples, which add a pleasant sourness.

With tomato paste

This is a more economical option than boiling zucchini with tomatoes. If desired, the paste can be replaced with tomato juice.

Pour sugar and salt into a saucepan with water, add oil, put paste (juice). Boil. Add zucchini and cook for 10 minutes. Add pepper, onion, simmer for 10 minutes. After pouring in the vinegar, add the garlic. Cook for another 10 minutes.

With rice

Zucchini appetizer can be made with rice. You will get a delicious dish that only needs to be warmed up before serving.

Put everything except the vinegar in a saucepan. Boil for 30 minutes. Place well washed uncooked rice. Simmer for another 30 minutes. Pour in vinegar, add garlic and cook for 10 minutes.

If you want to make a salad with hot peppers, put it in the sauce along with garlic and vinegar.

How to store Uncle Bens

Pour the zucchini sauce into dry hot jars immediately after the end of cooking. The container is hermetically sealed.

When the jars of hot sauce are tightly closed with lids, they are turned upside down and placed on a flat surface. From above, the container must be closed so that they do not cool down very quickly. It is imperative to check if juice is leaking from under the lids: this will mean that the jars are not tightly curled, and the salad will not be stored.

After cooling completely, the snack can be removed to a permanent place. Zucchini blanks are well stored at room temperature in a cool room, where light does not penetrate. But, of course, the ideal place to store homemade salads is the cellar.

I strongly do not recommend replacing anything, otherwise it will not be what was planned.

Despite the fact that manufacturers write on the packaging the composition of their products, sometimes complete, sometimes not, often in order to reproduce it at home, you need to try several combinations, several proportions in order to get something similar to your favorite classic product. This recipe for either a sauce, or a salad, or lecho, in my opinion, is an excellent imitation of the very Uncle Bens, which is sometimes pronounced as Anglobens or Unclobens and this brings a smile))) For those who do not know English: “ Uncle Bens "translates as" Uncle Bens ". In the composition of the preparation, we include zucchini, which gives it tenderness and juiciness. If you want to get exactly the sauce - grind the components on a coarse grater, if you want to get a salad - cut it into pieces, like me.

Ingredients per 0.5 liter can:

  • zucchini - 300g (peeled weight);
  • tomato - 1pc;
  • onion - 1pc;
  • carrots - 1pc;
  • pepper - 1pc (better in half of a different color);
  • garlic - 3 cloves;
  • tomato paste - 30g;
  • salt - 1 tsp (no slide);
  • sugar - 1 tablespoon;
  • vinegar 9% - 2 tablespoons;
  • vegetable oil - 30ml;
  • spices: coriander, cumin, paprika.

Ankle Bence salad for the winter: a recipe with a photo step by step

  1. To make a delicious sauce, you need to pick up good, ripe tomatoes. If they are homemade, a little overripe, it's okay. The peel in the sauce will only hurt, so we need to get rid of it. Cut out the stalk, make shallow cuts cross-to-cross in place of the stalk. Boil water in a saucepan. Gently, so as not to burn yourself, put the tomatoes in boiling water with a slotted spoon and wait 2-3 minutes, depending on the size of the fruit.
  2. After a while, the peel will lag behind a little, burst and curl a little. We take out with a slotted spoon and put the hot tomato on a cutting board, cool a little. We peel the tomato with our hands, helping ourselves with a knife.

  3. Cut into arbitrary pieces, the juice is also useful to us.
  4. We wash the zucchini, peel and remove seeds, if any. We leave the milk zucchini as it is, cutting off only the browning on the peel. Cut into medium-sized equal pieces.
  5. To make the appetizer brighter - choose bell peppers of different colors. We need a total of one pepper, so we take half each red and green. We wash, clean from the tail, partitions and seeds. In order that not a single seed slip into the sauce - rinse it in the middle and dry it. Cut into not very long strips.
  6. Cut the carrots into strips.
  7. Onions - in half rings.
  8. Peel and rinse the garlic to get rid of the transparent film. Grind the entire norm with a knife.
  9. Preparing other ingredients for the sauce: tomato. pasta, salt, sugar, oil, vinegar and spices.

  10. Pour 100 ml into the saucepan in which we will prepare the sauce. water, pour in oil, put tomato paste, salt and sugar. Bring to a boil, stirring occasionally.
  11. Pour out the slices of zucchini. Mix everything well and simmer over low heat for 10 minutes.
  12. Add chopped vegetables - onions, carrots and peppers. Simmer under a lid over low heat until all ingredients are soft.
  13. Place the peeled and chopped tomatoes. Simmer for 10-15 minutes.
  14. Spices for the sauce must be exclusively ground. Pour in the prepared spices, pour in the vinegar. Add garlic and taste. We adjust the taste by adding whatever is needed. The sauce should be moderately spicy, moderately sweet and sour. Simmer for 3-5 minutes and the salad is ready.
  15. We sterilize the jars, boil the lids.
  16. We lay out immediately hot. We roll up. Turn over. We keep it cool.

Ankle Bens salad is a little different from the usual preparations. Delicate vegetable pulp, spicy sauce greatly distinguishes it from other preservation, you will definitely like it! Salad - lick your fingers!

  • The choice of vegetables should be better approached responsibly. Choose a young, bright orange carrot. We take it rather wide, with a blunt ending - this is the sweetest and very juicy. Make sure that there is no very dense greenish core. If you have already noticed such a flaw at home, be sure to cut out this part.
  • Take the most common onions, but leave the purple or salad for other dishes, in this preparation it will not be appropriate. After heat treatment, purple onions acquire an ugly and unappetizing color.
  • Coriander kernels are often sold whole, and cumin or cumin cannot be found in ground form at all. Prepare a mortar and grind it into powder. The spices will give off a strong aroma, which cannot be achieved using ready-made ground spices.

Salad cooking options

  2. If you do not have the right amount of tomatoes, then you can increase the amount of pasta. For our recipe, add 1 more tablespoon of the sauce.
  3. Another cooking option would be to use finely chopped red chili peppers, maybe with seeds. This is for those who love sharper.
  4. Additional spices: in this case, it is curry and turmeric - the dish will acquire a light oriental flavor.
  5. Ankle Bens is also cooked with rice, which is added during the preparation of the salad and it is brought to readiness along with vegetables. I myself haven’t tried to do that, it’s embarrassing how it will be stored ... Although the idea is interesting - it’s not a snack, but a full-fledged garnish for meat or poultry.
