Minced meat is needed much less than for cutlets, and as a result, there are quite impressive “cutlets” with a hearty and tasty filling in the plate.

To prepare 16 slices:

  • 1 kg minced meat (chicken, turkey, pork, beef)
  • 6 boiled chicken eggs
  • 2 large onions
  • Salt pepper
  • Breadcrumbs for rolling

Sauce Ingredients:

  • Water - 600 ml
  • Sour cream - 200 ml
  • Soy sauce - 1 tbsp. l.

We skip the chicken breast through a meat grinder.

Twist one onion to minced chicken.

For juiciness, add cream to minced meat.

  • Now it remains only to salt the cutlet mass to taste (about 1 tsp coarse salt without a slide), season with pepper, your favorite spices and drive in a couple of eggs of the second category or one selected one.
  • Knead the minced meat thoroughly, periodically beating it against the walls of the container.

Making mushroom stuffing

  • 300 g of mushrooms (chanterelles, porcini, boletus or boletus) are cut into small pieces and sent to a frying pan with oil, where we will fry them over medium heat until the liquid they release evaporates, and then another 5-10 minutes until golden brown.

It is best to take forest mushrooms for filling. They are more fragrant than mushrooms.

  • We boil a couple of selected chicken eggs hard-boiled, then cool, peel and grate with large chips.
  • 15 g of green onions (1/3 of a small package), rinsed and chopped randomly with a knife.
  • Now, in a common bowl, combine the fried mushrooms, onion and egg, salt the filling to taste and mix.

Cooking cream sauce

  • 2 tbsp butter melt in a saucepan or a small ladle, add the same amount of white flour to it and, with active stirring with a wooden spatula, fry the flour to a pale beige color.
  • At this stage, pour cold cream (from 20% fat content) into the saucepan in a thin stream and actively mix everything with a whisk in order to have time to break the lumps before heating the cream.
  • Now we cook a homogeneous sauce over low heat until thickened, periodically stir with a piece of wood, and as soon as the mass reaches the desired consistency, remove the ladle from the heat, and add a pinch of salt to taste to the sauce.

Cooking chicken zrazy with mushrooms at home

  • We put a frying pan on medium heat and pour oil (non-aromatic sunflower) into it, about 50 ml, which is equal to 1 stack.
  • In the meantime, we divide the minced meat into small lumps (50 grams each) and roll them into balls. After that, we take each ball in hands moistened with water and turn it into a cake.
  • We put the filling (1 tbsp) in the center of the cake and close it tightly so that the filler does not look out.

  • Roll the zrazy in breadcrumbs or flour and send it to fry in heated oil.
  • You need to fry the cutlets for 5 minutes on each side, then pour the toasted zrazy with sauce, reduce the heat, cover the pan with a lid and simmer them for another 10 minutes.

During this time, you will have time to cook pasta. And the sauce and hot complement the taste of the pasta perfectly.

Cooking

    Potatoes need to be boiled in their skins. The most convenient way to do this is to bake in a microwave oven in plastic bag 7 minutes.

    We put the washed tubers in a bag, tie it tightly and make a couple of small punctures in the film with a knife. When cooking at maximum power, it will take 7-8 minutes to boil medium-sized root crops.

    Cool the boiled potatoes a little, peel and knead with a crush.

    We drive an egg into mashed potatoes, add 2/3 of the total volume of finely chopped dill, flour, salt and pepper.

    We mix everything until we get a thick sticky mass and, wetting our hands in water, roll up small balls the size of ping-pong balls or a little more.

    Now chop the chicken fillet into arbitrary small pieces and immediately pour it, after the mushrooms, into the pan.

    We cook the roast for 7 minutes, adding salt and lightly peppering the filling.

    When the chicken is fried, we shift the finished filling to a plate and add the rest of the chopped dill to it.

    We form cutlets. We wet our hands in water and roll a potato ball on the palm - we get a cake. In the center of it we put 1.5-2 tbsp. fillings and seal tightly.

    This is how we do everything. From the presented amount of ingredients, I got 6 hearty meatballs with filling.

    We roll the finished zrazy in crackers, ground into small crumbs, and send them for frying in very hot oil.

    For 4 minutes, fry the cue balls with the filling on one side and the other, until a dense and very crispy crust is obtained.
