At the same time, it is worth boiling no more than 2 kg of heavenly apples in a basin or apple slices... Otherwise, it will be difficult to mix and cook for a long time.
Most often, paradise apple jam is made from whole fruits with tails. The ponytails are shortened (cut off the hardest upper part, about 1/3 of the ponytail).
Why leave a ponytail: Firstly, the tail is not so easy to pull off (unlike cherries or cherries). And secondly, it is more convenient to take out paradise apples with tails from the syrup and eat.

Therefore, in order not to digest and thicken the jam unnecessarily ( thick jam, having frozen, will become even thicker, approaching the candied fruits, and will not be so tender), it is better to follow the principle by which readiness is judged - as soon as it began to stick to the walls, it is ready.

There is an option for making jam in slices. Cooking in slices or slices is convenient when not all apples are perfect. Then you need to remove the bad part, and put the good part in the jam.
When cooking in slices, the Chinese do not need to blanch and prick. Just cut into 4 parts, remove the core and tail (after cleaning and discarding from 2.5 kg of china, I got 1.5 kg of slices for jam). According to the same recipes, you can cook large apples, cut into pieces or wedges.
The slices are covered with sugar (either mixed, or in layers: apples-sugar-apples-sugar). And insist with sugar for 10-12 hours at room temperature. And then they boil it by adding a little water. Dissolve sugar with water and boil the syrup, squeezing out the juice from 1/2 lemon and adding the grated zest. Chop the apples over the entire surface with a toothpick without separating the tails. Pour the chopped apples into a saucepan with a thick bottom, and pour hot syrup / do not boil !!! /, cover the top with an appropriate plate and place the load. This is necessary so that the apples are saturated with syrup and do not darken, try to press down so that all the apples are immersed in the syrup. Leave so for soaking for 12-18 hours (I left it overnight). After the time has elapsed, remove the plate with the load, and bring to a boil, cook for 5 minutes, turn off and let cool.
Repeat, covering with a squeezing plate with a load, leaving again for 12-18 hours.
On the 3rd day, bring the jam to a boil, boil for 5-7 minutes and put in sterilized jars.
The jam turns out to be extremely tasty and the apples have an amber color. The rackets can be used as a decoration for cakes.
