Fast and tasty - this is the motto under which the lazy "Napoleon" from the "Ushki" cookies burst into the life of cooking. Simple enough, but the original homemade cake cannot leave the sweet tooth indifferent to it. Carefully selected, quality ingredients provide an unrivaled taste of the finished dessert.

The basis is the "ears" puff pastry, which in itself is already a wonderful treat. It is freely available in any region at a fairly reasonable price, which is an undoubted plus.

One of the key points in cake preparation is the choice of cream. Too sweet, too liquid, quickly losing its shape - and all down the drain. This dessert uses the absolutely inimitable Diplomat cream custard. Its second name is "Plombir", because of the similarity in taste with everyone's favorite ice cream. This cream is perfect for interlayers of such cakes as "", "Milk Girl", "Napoleon", for filling and various. However, it does not fit at all.

Ingredients

  • Cookies "Ushki" - 800 gr.
  • Milk - 400 ml
  • Sugar - 140 gr.
  • Eggs - 1 pc. (large)
  • Cream (33%) - 200 ml
  • Butter 50 gr.
  • Starch (corn) - 35 gr.

Cooking method

We start by making delicious Plombir cream.

Pour milk into a stewpan with a thick bottom (or a saucepan) and set on medium heat to warm up. Meanwhile, in a separate bowl, mix eggs, sugar and starch.

Bring the milk to a boil, remove it from the heat and add it to the egg mixture in a thin stream, stirring it all the time with a whisk. Stir vigorously enough so that the hot milk does not curdle the eggs.

We send the resulting mixture back to the pan and put on low heat.

Gradually, when heated, the cream will acquire a thicker consistency. Do not forget that while the container is warming up, the mass needs to be stirred all the time, in order to avoid the appearance of lumps.

When it was possible to achieve the desired consistency, similar to thick sour cream (as in the photo), remove from heat and transfer to a clean, dry dish.

Add cold butter.

Butter can be added to hot cream, or you can whip it separately with a mixer until fluffy, and then combine with a custard base. In this case, the mass will be more stable.

We cover the custard base with cling film in contact, and, after cooling, send it to the refrigerator.

In a chilled bowl, beat the cream until thick. They must also be very cold. Add the custard base to the cream in parts, well punching the mass with a mixer.

As a result, you should get such a homogeneous cream.

Do not whisk for a long time, so that the cream does not stratify and turn into butter!

It is convenient to use a split form for assembly. But if you don't have it, you can do it.

We lay out the cookies in layers, generously smearing each with cream, filling all the voids.

Cover the mold with cling film and refrigerate overnight.

I had heard about such a cake for a long time, but I still could not dare to try it, I was embarrassed by its name. But since now it's summer outside and I don't want to turn on the oven, because it's already incredibly hot at home, I decided to make a lazy Napoleon from the ears of cookies. It is made from just such a cookie, because it most of all resembles the necessary base for a cake, and it is also flaky and tasty. I was worried that in the end, the Napoleon from the ears may remain dry or poorly soaked, but thanks to the correct amount of cream, everything turned out just fine, and it was very soft.

I make a custard cream for him with the addition of butter, but a small amount so that it does not turn out to be greasy, but is more tender. Napoleon cake is made without baking in about 30 - 40 minutes, then the night is soaked and it turns out delicious. And to make the taste even better, I added slices of banana between the layers. There are a lot of cookie-based cakes, because it is quick and easy, so I recommend that you try to make it too.

  • Chicken egg - 1 pc. (big)
  • Sugar - 6 tablespoons
  • Potato starch - 1.5 tbsp
  • Wheat flour - 4.5 tablespoons
  • Vanilla - a pinch
  • Butter - 100 g
  • Banana - 1 pc.

How to cook Napoleon at home

To make a quick napoleon, I immediately start making custard. There are many variations of its preparation and each housewife has her own one, but I like this particular method, since the cream comes out thick, but delicate in taste and soaks desserts well. Pour milk into a saucepan with a thick bottom, add a large egg, sugar, vanilla, starch and flour.


Then, using a whisk, I thoroughly mix everything to get a liquid mass without lumps.


Then I put it on medium heat and cook, stirring all the time until thick. It is more convenient to stir with a whisk, but look, stir from the bottom, as the custard can easily burn. In time, this takes about 15 minutes. Look at how it has become, if thick, then stop cooking. Then, remove from heat, add butter and mix until smooth.


The cream is ready and I leave it to cool slightly so that it is not hot, but warm. Also keep in mind that it shouldn't cool down completely, because warm it will saturate the cookies better.


To make the napoleon cake from the ears of cookies even tastier, I will add bananas between the layers. To do this, I peel one banana and cut it into small pieces. Other fruits such as kiwi or orange can be added.


And now it's time to form the Napoleon cake, for this I put parchment on the bottom of the split form and fasten the form. Then I lay out the cookies in the first layer. It took me 12 cookies and a small piece for one layer.



Then I spread the next layer, and spread the banana slices between the cookies.


Thus, I shape the whole cake. I also grease it generously with cream on top. In total, I got 4 layers.


I make crumbs from 10 ears, just chopping them. This can be done with a blender, rolling pin, or in any way convenient for you.


Sprinkle Napoleon with crushed crumbs on top and refrigerate for the whole night. Two or three hours will not be enough for it if you want it to be soft.


And in the morning I decorate it to my taste. To do this, I cut the chocolate into pieces, and also took a couple of slices of apricot and berries. You can decorate in any way you want. In my opinion, the Napoleon cake at home turned out to be beautiful and appetizing.

After assembling the cake, it will need to be kept in the refrigerator for several hours, ideally overnight, so that the ears are soaked, softened and the whole structure is well cut with a knife into portioned pieces and resembles its famous older brother.

How to make Napoleon cake from Ushki cookies without baking

  1. We take the oil out of the refrigerator in advance to make it soft. Melted is not suitable in this case.
  2. Let's start by making the cream. This is also not a fast process. Break eggs into a bowl, add half the sugar and flour. Mix with a fork, no need to beat.
  3. We heat milk on the stove. We heat, not boil. We need it to warm up to the moment when - just a little more and it boils.
  4. Pour some milk into the egg mixture in a thin stream and mix quickly. The mixture will become thinner, and we can now pour it into the milk without fear that the eggs will curl up in flakes or lumps.

  5. Pour the egg mixture into a saucepan with milk and return to the stove. We turn on moderate heat, and, stirring continuously with a whisk, cook until thickened. The beginning means that the whisk will begin to leave marks on the surface of the mixture. Remove from heat and continue stirring for a couple of minutes. We get a blank, of the same consistency as in the photo.


  6. We take cling film and cover the contents of the saucepan using the "in contact" method, that is, the film is placed directly on the surface. Leave to cool. And the film is needed so that the surface does not dry out during the cooling process. Cool until warm.
  7. When it cools down, pour the remaining half cup of sugar into a bowl and add soft butter.
  8. Beat with a mixer until fluffy, whitening and uniform. We transfer the mixture from the pan to a bowl.
  9. Beat again with a mixer for a few minutes. We should have a thick, uniform cream. But it is still warm and not thick enough, so cover it again with "in contact" foil and put it in the refrigerator for 1 hour.
  10. It's time to collect the cake. He prepares us without baking, everything for this has already been done by the cookie maker. We need a flat dish. I put the ears in rows, it is more convenient this way, and I got an almost square Napoleon with three layers of cookies and cream. Set aside 4-5 cookies - then make sprinkles of them. For the first layer, take the eyelet, dip one surface into the cream and put it on a dish. We do this with all the cookies of the first layer.
  11. I ended up with 3 rows of cookies in each layer, and for greater density I stacked them in a checkerboard pattern. This can be seen in the photo below. Lubricate with cream on top.
  12. Repeat layers.
  13. When we are finished assembling the cake, coat the top and sides.
  14. Put the set aside cookies in a bag and use a rolling pin to turn them into crumbs. Cover the top and sides of Napoleon with a crumb.
  15. Here Napoleon, in principle, is ready. But now it cannot be cut yet. The cookies are still hard. Therefore, we put it in the refrigerator. After the cake has stood there for several hours, it can be served and served.

Now, after all, I want to say a few words as a personal review. As a quick option, it certainly has a right to exist. But then, don't make the right custard. It is better to just beat the condensed milk with butter. Simplifying the task of making dessert to a minimum. Since this variation is not worth a lot of fuss. The ears, of course, were soaked, but along the edges of the cake they were still hard in places. Therefore, my verdict: cook only when you do not have ready-made cakes for Napoleon on sale, since in my experience, they still make the easiest, fastest and most delicious (not counting, of course, the taste of a real cake) lazy Napoleon without baking that I have ever done.

Firstly, it is made very quickly and easily, and secondly, it is very tasty, insanely similar to the one sold in the store. To do this, take 1 liter of milk, pour half into a saucepan and set aside. Add three eggs to the remaining half and begin to beat with a whisk. Gradually add sugar, vanillin, flour and continue to beat so that there are no lumps.


Step 3. Meanwhile, put another part of the milk on the fire and bring it to a boil.


Step 4. As soon as the milk boils, add it in a thin stream, constantly stirring our milk mixture:


Step 5. Cook the resulting mass for 5-7 minutes until thickened. If you mix it very carefully and without stopping, then no lumps will form, nothing will burn. Turn off, let the cream cool thoroughly and add oil at room temperature, stir.



Step 7. Lay out the second layer in the same way. Make sure that there are no voids, you can break cookies and insert even pieces. Re-coat with cream and so on until the biscuits and cream run out.

Let's prepare the products
Remove the butter from the refrigerator.

Sift the flour through a sieve. Be sure to do this: after all, you do not need pieces of starch, threads or, what good, flour bugs in the cream.
The most important thing in our instruction is this. We will deal with it. Pour 0.5 liters of cold milk into a 1 liter saucepan and beat in the eggs.

Beat with a whisk or mixer.

Add granulated sugar.

Add vanillin. Whisk.

Without stopping whipping, add flour in small portions. Be sure to make sure that there are no lumps.

Pour the remaining milk into a 2 liter saucepan. Put on fire and bring to a boil.

While the milk is boiling, add the egg-milk mixture to it in a thin stream, stirring constantly.

Cook over low heat after boiling for 5-7 minutes. The mixture should thicken. Hint: To prevent the cream from sticking to the bottom or, even worse, not burning, place a flame divider under the pan.

Remove the pan from heat and cool the resulting mixture.

Put the softened butter in a bowl and beat first on low, and then on the maximum speed of the mixer. The oil should become fluffy and lighten a lot.
Add the butter little by little to the cooled mass, whisking well each time you add the next portion.
