step by step recipe with photo

Cheesecakes with oat flour are a great hot breakfast option for the whole family. Thanks to the oat supplement (easy to make in a cereal blender), they are more satisfying, healthier and more digestible. But the basis of the dough in the presented recipe is still semolina, without which the cheesecakes will not retain their shape.

The consistency and quality of the curd are decisive: the volume of the ingredients introduced depends on them. For breading, it is better to use regular wheat flour, as the oatmeal can burn in the pan.

Appetizing syrniki can be decorated with whole berries from jam.

Ingredients

  • cottage cheese - 250 g
  • chicken egg - 1 pc.
  • vanilla sugar - 1 tsp
  • oat flour - 2 tbsp. l. in dough + for breading
  • salt - 1 pinch
  • sugar - 2-3 tbsp. l.
  • baking powder - 0.5 tsp.
  • semolina - 2 tbsp. l.
  • sunflower oil for frying

Preparation

1. Rub the curd through an iron sieve and place in a deep mixing bowl. If the curd has a creamy texture and does not have lumps, you can immediately put it in a bowl. Add the egg to the curd and stir with a fork or spoon until smooth.

2. Add sugar (plain and vanilla) and salt. Mix thoroughly.

3. Add sifted flour and baking powder. Mix well with a spoon. If there is no oatmeal, you can grind the oatmeal with a blender until it is finely crumbled.

4. Add semolina, stir. Leave the dough aside for 7-10 minutes so that the groats swell and do not have a pronounced aftertaste of grains in the prepared cheesecakes.

5. Sprinkle a few spoons of breading flour on a kitchen board. Spoon a small portion of the curd dough and roll in flour. Then, using a knife, give the workpiece a round and flattened shape. Process the whole dough like this.

6. Heat the oil in a frying pan, fry the pancakes on both sides for 1–1.5 minutes over medium heat until golden brown.

7. After frying, it is advisable to transfer the cheese pancakes to a plate with a napkin so that the excess fat is absorbed into the napkin.

Classic simple in a pan

It is customary to prepare classic cheesecakes according to the recipe of A.I. Mikoyan. It was his book, published in 1952, that gave the cheesecakes a certain authority. Since then, any Soviet canteen was ready to provide this uncomplicated product. But what is the most commonly used recipe at home?

Half a kilogram of cottage cheese was rubbed through a sieve, one egg (about 20 grams), 6-7 tablespoons of flour (about 80 grams), 2-3 tablespoons of granulated sugar, 20 grams were added. butter, a pinch of salt. Sometimes semolina was used instead of flour. Needless to say, every caring mother changed this recipe for her family?

And, of course, everyone knows that it was customary to fry syrniki in a frying pan with sizzling and sizzling unrefined butter. How many carcinogens were released, no one cared - the favorite breakfast of the whole family remained the same for years.

How to make a PP with a photo

Cottage cheese is the most useful product. Casein contains amino acids that provide your stomach with a long-lasting feeling of fullness. The body is saturated with the necessary amount of potassium, phosphorus, iron, magnesium, zinc, fluorine and copper. In addition, it is absorbed best in the morning.

And if in your family this high-protein product is treated without much love, cheesecakes are a great way to introduce it into the diet.

How to make them dietary and PP?

Do not limit yourself to wheat flour - rye, oatmeal, corn, buckwheat are much healthier. In addition, you can cook it in an elementary home coffee grinder - you only need a few spoons of it.

Cooking methods

In the microwave

As we noted above, there are various cooking options. But don't limit yourself to a frying pan and oven. If you have a microwave in your home, it can also be a great helper. Due to the fact that the oven heats food from different sides, cheesecakes will cook much faster! In addition, oils can be completely eliminated.

Try putting cheese cakes in cute plastic tins.- then the dish will become even more interesting and appetizing. Plain baking paper will also work. It has been proven that this cooking method will preserve protein and vitamins much better than a boiling pan - cheesecakes in the microwave are definitely a more dietary option.

How and how much to cook in the microwave: the time will most often not exceed 20 minutes. Although, separate recommendations for setting the temperature and duration of operation may be attached to a specific device.

Steam (in a double boiler)

Steam cooking is known for many useful qualities, this also applies to cheesecakes - steamed (and it does not matter in a double boiler or multicooker) they will turn out to be dietary. They will have all the variety of taste, and vitamins will remain in place.

Correct heat treatment is especially important for cottage cheese - the protein is destroyed by strong heating and loses its beneficial properties. The disadvantages are undoubtedly the absence of an attractive crust and golden color. Cheesecakes are likely to come out slightly pale.

How steamed cottage cheese pancakes look like

The solution can be various dressings - cocoa and powder for sweets, bran and cereal - for dietary ones. Muesli, coconut, flaxseeds, almond petals and sesame seeds - don't stop at just one, look for your favorite. Moreover, there really is something to experiment with - store shelves are filled with healthy products.

If you do not have a steamer, you can use a regular saucepan of boiling water and a colander to prepare a batch of one. If you turn it upside down and place it in a pot of boiling water so that the water does not touch the product, the result will be the same as in a branded steamer.

In a multicooker

Many modern multi-cookers have a bake function - a great option for those looking for dietary meals. Try it! Your cheesecakes will be golden brown and baked. Slightly crispy included!

Unlike an oven or gas stove, this cooking option does not require close supervision. You will buy time. And if you lightly grease the cheese cakes with butter, you get an extremely tasty dietary dessert that will be appreciated by both children and adults.

In a frying pan

Do not think that cooking dietary cottage cheese pancakes in a frying pan is a losing option in advance. It all depends on the quality of the oil used and the cooking time.

What curd cakes look like, cooked in a pan

If you are using thick-walled pans, ceramic or Teflon, the amount of oil can be greatly reduced. Do not forget about using baking paper even in a frying pan - excess fat simply cannot get on your plate. And most importantly, when using oils - at the end, put cheese cakes on paper - the extra calories will go away by themselves.

In the oven

The oven is the most classic dietary way of cooking, and not just cheesecakes. Use the convection mode in your stove, grill. Experiment with the temperature, and the cheesecakes will be incomparable.

Secrets of delicious

To prevent the curd cakes from falling apart in the pan when turning, just add the protein from another egg to the mass. This will not greatly affect the calorie content, but the amount of protein in the portion will even increase.

If dietary curd cakes have a grayish color and not appetizing, it is enough to add just one spoonful of cornmeal or ground corn kernels, or a little citric acid.

Train yourself to use bran. Especially low-calorie and healthy rye. Syrniki with a spoonful of bran will have a more pleasant consistency, and the health benefits can hardly be overestimated.

Use a blender or mixer in every recipe to avoid clumps. Pasty curd cakes are easier to mold and taste much more pleasant.

To keep the cheese pancakes always tender, add a couple of tablespoons of low-calorie yogurt. Again, you will not practically increase their calorie content. Greek yogurt is perfect for this.

So as not to fall apart

Cheesecakes should be small in size, so it will be easier to turn them over and so they will bake more evenly.

Cheesecakes fall apart when there is a lot of sugar in them.

When forming the product, hands need to be slightly moistened with water, then the viscous cheesecake with flour will not stick to them.

Add flour to the curd mass in small quantities so that the curd does not look like dough for dumplings, everything must be mixed well until smooth.

Turn the cheesecakes not with a spatula, but with kitchen tongs.

Before frying, dip the cheesecake into the starch. The starch does not burn and does not burn.

Fry the frozen cheese cakes: for this, put the mass in the refrigerator for 2-3 hours. Perfect!

To cook delicious diet cheese cakes in the oven, you need egg yolks. First, we separate the whites from the yolks. Mix the yolks with honey, beat and add the oatmeal. Leave the mixture for about 5 minutes.

Add low-fat cottage cheese to the mixture, stir with a spoon. You can also use a potato grinder to smooth the mixture.

Add the washed raisins to the curd blank. In the oven, the raisins will increase in size and become juicier. Choose light raisins for the recipe, they are sweeter than dark ones. A pinch of vanilla will improve the aroma of the dish, give it a delicate sillage and lasting aroma. And if you add another pinch of soda, then diet curd cakes with raisins will turn out more magnificent and airy.

Stir the mass well, and if it comes out a little watery, you can add a little more flakes. Wheat flour can also be added, but in this case, cheese cakes are dietary, so it should not be included in the composition.

Cover the form with parchment, lightly grease with olive oil. Form about 8-9 large syrniki from the curd blank with wet hands. Put them in a mold so that they are "free".

Bake at 220C for about 20-25 minutes on the middle shelf of the oven. You do not need to turn it over.

For children, such syrniki will become not only tasty, but also useful if you add a grated apple. For those who prefer a diet, I recommend using cottage cheese with a low percentage of fat. The addition of cinnamon will add a unique aroma to the cheese pancakes, if you are not a fan of cinnamon in baking, feel free to replace cinnamon with vanilla or vanilla sugar.

Oat curd cakes can be baked in the oven and fried in a pan with the addition of vegetable oil.

So, let's prepare all the products on the list. I will cook cheesecakes from half of the products specified in the recipe, my family is small, and we have enough cheesecakes for breakfast. If you don't have oatmeal, I suggest you do as I did - just grind the oatmeal in a blender.

Put the cottage cheese into a bowl and beat in the egg.

Add cinnamon and sugar to a bowl. Adjust the amount of sugar to your taste, I don't like very sweet cheese cakes. It should also be borne in mind that too sweet dough may stick to it when frying in a pan.

We add two types of flour: wheat and oat flour. You can cook cheese pancakes exclusively from oat flour, such pancakes will turn out to be more moist. It is advisable to take an apple of sour varieties. Rub the apple on a medium grater and add to the rest of the ingredients.

Knead the dough well. As you can see, my cottage cheese is coarse, it is better to use a more uniform cottage cheese.

Pour vegetable oil (1 tablespoon) into the pan, put the pan on the fire and spoon the cheese pancakes in portions. If you like cheesecakes with a thicker consistency, add more oatmeal. Fry oat pancakes on both sides until golden brown over medium heat, for 2 minutes on each side.

Ready-made cheesecakes are served with morning tea-coffee with sour cream, honey or jam.

Oatmeal cheesecakes are good both hot and cold. Small children eat cheesecakes especially well.

Bon Appetit!
