Chicken pancakes with oatmeal on kefir.

Ingredients:

1 defrosted chicken breast
1 egg
3 tbsp. l. oatmeal
salt, black pepper, paprika, curry (all to taste)
kefir - until the desired thickness of the mixture is obtained (like a dough for pancakes)
1 onion
parsley and dill
some flour

NOTE.

To taste and your own imagination, you can also add finely chopped sweet red Bulgarian pepper, champignons, carrots, zucchini, etc. to create the desired flavor note.

Preparation

Cut the chicken breast into 1 x 1 cm cubes or a little smaller.
Finely chop the onion and herbs.
Add all other ingredients and mix thoroughly.
It is useful then to set aside the mixture for 3-5 minutes and stir again.
If the mass turns out to be too thick, dilute it with kefir, if it is thin, add a little flour.
The mass should be of medium thickness, like a dough for pancakes.

We heat a frying pan with vegetable oil, spread the resulting mixture in the form of small pancakes with a spoon and fry over medium heat until a beautiful crispy crust is obtained, first on one side, then on the other.
These pancakes are fried very quickly, and the crust turns out to be golden, ruddy, fragrant!
Cooked hot pancakes can be served with tomatoes or other vegetables to taste.

DRINKED ON KEFIR

Ingredients:

Eggs - 5 pcs.
- butter - 100 g
- kefir - 2 glasses
- flour - 1/2 cup
- salt - 1/2 tsp.

Ingredients:

300-400 grams of cabbage
200 milliliters of kefir
1 egg
1 onion

1/3 teaspoon baking powder
salt to taste
vegetable oil for frying

Preparation

Chop the cabbage as small as possible, sprinkle with salt and actively mash it with your hands, so that it becomes soft and let the juice out.
Grate the onion into it on a coarse grater, add kefir, egg, flour and baking powder, mix well.
The dough should be like thick sour cream, add more flour if necessary.
Heat some vegetable oil in a frying pan.
Fry the pancakes over medium heat until golden brown.

Ingredients:

2 medium chicken fillets, cut into small 1 x 1 cm cubes or smaller
100 g of hard cheese (any), cut into small 1x1 cm cubes
2 eggs
100 g of kefir
100 g flour
3 sprigs of parsley, dill and green onions
salt, spices to taste.

Preparation

Mix all the products.

We heat a frying pan with vegetable oil, pour the resulting mixture in the form of small, thin pancakes and fry over medium heat until beautifully crisp, first on one side, then on the other side

Put the finished pancakes on a plate, decorate with vegetables and serve hot.

Quick fried pies made from kefir and cottage cheese dough.

Ingredients for the test:

250 g cottage cheese (not too wet)
1 tbsp. kefir
1 egg
1 tsp salt
1 tbsp. l. no top sugar
1 tsp with a slide of baking powder
3 tbsp. flour

Preparation

Pour kefir into a cup, add baking powder, salt, sugar, egg, cottage cheese, mix everything thoroughly, add sifted flour and knead a soft sticky dough (do not add excess flour! - immediately after kneading this dough should be sticky and viscous, then it thickens over as the gluten swells).

It is better to take medium-sized cottage cheese for the dough. If the cottage cheese is granular, rub it through a sieve beforehand - the grains of cottage cheese in the dough will not disperse and the pies will turn out in brown toasted pimples.

Cover the dough with a cup and leave for 20-30 minutes for the gluten to swell.

Make the filling according to your desire and the availability of products (see pie fillings). For example, stewed cabbage with boiled egg and fresh dill; mashed potatoes with onions fried in butter or with fresh greens; green onions with butter and boiled egg.

Roll out the dough for pies on a table powdered with flour (if the dough sticks to the table, pour more flour on the table), into a layer 0.5-0.7 cm thick.

Before frying, shake off the excess flour from the pies so that it does not burn and smoke during frying, contaminating the oil.

Fry the pies in preheated vegetable oil, poured into 1 phalanx of the index finger. When frying, the pies should be immersed in oil at half their thickness.

Unlike yeast dough pies fried in butter, these pies are not greasy at all.

Heat kefir until warm (28-30 g. C), add soda, stir, add salt, sugar and stir again, leave to stand for one minute.
Then gradually add flour, constantly kneading, so that the thickness of the dough is like homemade sour cream (the dough should be moderately thick).
Heat vegetable oil in a frying pan, poured in a layer 0.5-1 cm thick, spoon out the dough, minced meat on the dough, and some more dough on the minced meat. Cover the minced meat with dough so that small holes remain. We do all this quickly.
Fry over medium heat on one side, then on the other until a beautiful golden color.
Serve hot.







Pancake-liver snack cake on kefir.

Ingredients:

For liver pancakes:

Scroll 0.5 kg of liver in a meat grinder (you can finely chop with a knife),
add 1 egg
1/2 tsp salt,
1 tbsp. l. with a heap of flour,
2 tbsp. l. kefir (or milk),
2 tbsp. l. vegetable oil.

Mix everything well and fry like regular pancakes.

For regular pancakes:

1 glass of kefir,
a glass of flour,
1/2 tsp salt,
1 tbsp. l. Sahara,
1 egg,
4-5 st. l. refined oil.

Mix everything so that there are no lumps, then add 1/2 glass of water.
- Bake the last two pancakes thicker, they will be used to decorate the top of the cake.

For the layer:

Grate carrots,
finely chop the onion.

Fry everything, then add mayonnaise (or sour cream) and garlic.

Preparation

Cut out circles from ready-made pancakes using a saucer.
Grind the remaining edge from the liver pancakes with mayonnaise, they will also go to the layer of our cake.
We alternate pancakes, put fillings between them.

Decorate the top of the snack cake with a flounce of two pancakes. To do this, cut a circle in the middle of the pancake using a glass and cut the pancake on one side. We put the shuttlecock on one half of the cake. We do the same with the second pancake.

  4. For the dough, first beat the eggs a little with a whisk.
  5. Combine slightly warmed fermented milk product with eggs, beat again. Season with salt and pepper.
  6. Mix flour with soda, sift. Pour in small portions over the whipped mass, stirring so that no lumps remain. The dough should be smooth and like thick sour cream.
  7. Add the filling and chopped greens to the dough. Mix well.
  8. Fry over medium heat, preheating the pan, and pouring in a little oil. Spread out with a spoon in the form of small cakes. Turn over as it browns, then remove onto a plate lined with paper napkins. Add oil as needed.

Second option

The second option assumes the presence of the following products:

  • minced chicken, beef, pork, or mixed (unfrozen) - 270 grams;
  • kefir - 1/4 liter;
  • large egg;
  • onions - 1 piece;
  • incomplete teaspoon of baking soda;
  • 2-3 cloves of garlic;
  • premium wheat flour (it is allowed to take any other flour, semolina, and even bran) - 100-130 grams;
  • a teaspoon of salt;
  • refined oil.

Preparation:

  1. In slightly warmed kefir "extinguish" soda, stir. Leave on for 5-7 minutes.
  2. Salt the egg and stir with a spoon.
  3. Place the minced meat in the egg. Stir.
  4. Puree the peeled onions and garlic with a blender. Squeeze excess juice.
  5. Thoroughly mix the onion-garlic puree into the kefir-meat mixture.
  6. Stir the sifted flour to the resulting mass so that it acquires a density like sour cream. Let it "rest" at room temperature for 15-20 minutes.
  7. Heat a frying pan over high heat. Pour in oil, let it warm up.
  8. Use a spoon to place the mass in the form of small cakes. Fry over low heat, no more than 2-3 minutes on both sides, until they are golden brown.
  9. Put the finished pancakes on paper towels for a few minutes. After that, still warm, serve with various sauces, for example, garlic, ketchup, adjika. Or you can just with sour cream.

The third option

The following recipe has several interpretations. The dough is the same, but the twisted meat fillings are made in different ways.

First, we prepare the dough for which you need:

  • flour about 3 cups;
  • kefir - 1/2 liter;
  • 2 chicken eggs;
  • Baking soda - 1/2 teaspoon
  • salt.
    1. First of all, heat the fermented milk product in a saucepan until warm.
    2. Beat eggs and a little salt, combine with kefir.
    3. Sprinkle the sifted flour in small portions, while stirring the dough with a whisk, achieving the desired consistency, like thick sour cream.
    4. Pour in baking soda last, it should be extinguished with the help of lactic acid, which is in kefir. If the kefir is not too sour, the soda can be quenched with vinegar.

Now we are preparing the filling. Necessary:

  • minced meat (from any meat) - 500-600 grams;
  • one onion;
  • a clove of garlic - if desired;
  • salt and spices;
  • vegetable oil.

Cooking the first version of the dish:

  1. Peel and chop the onion.
  2. Take the coarse minced meat, and add the onion, salt and spices there.
  3. Stir everything well.
  1. Put the finished filling into the dough and mix gently.
  2. Spoon into a preheated frying pan with butter.
  3. Heat low and fry, covered, on both sides. Flip only once.

To make these pancakes lush, after mixing all the components, it is better not to mix the dough, but only to scoop it up while frying. Serve hot with sour cream.

Another kind of dish is prepared with the same ingredients:

  1. Fry finely chopped onion with minced meat in oil for 5-7 minutes, season with salt.
  2. Cool the filling.
  3. Make the dough according to the recipe above.
  4. Wrap the filling in the dough.
  5. Heat a frying pan with vegetable oil over a fire. Fry on both sides over low heat, covered.

Serve with sour cream or milk.

The third option resembles traditional belyashi, but it is much easier to prepare.

  1. Prepare the dough.
  2. For the filling, combine chopped onion with meat rolled through a meat grinder. Season with spices and salt.
  3. Heat a frying pan with a little oil and spread out in the form of cakes. Put the filling on top of the cakes with a small spoon, distribute it over the surface.
  4. Cover the filling with a layer of dough.

You can serve this dish with a salad of fresh vegetables.

  • one onion;
  • one glass of kefir;
  • one chicken egg;
  • wheat flour - 3 tablespoons;

3. The consistency of the dough should resemble thick sour cream. The last to add soda to the dough. If the kefir is not sour enough, the soda can be quenched with vinegar.
