You may need a little more or less flour than the recipe says. Therefore, you do not need to empty it all at once. We introduce it gradually, focusing on the required thickness of the dough.
6. Stage 6 Ingredients:
Add half a tablespoon of flour to the washed and dried raisins, mix. Add it to the dough.
7. I have metal molds. I do not grease them, but put paper molds in them. I fill the tins 2/3 full, as the cupcakes will slightly increase in volume when baking. I filled in 10 pieces. After filling, we send the form to the preheated oven.
8. After readiness, after about 40-50 minutes, turn off the oven, however, we do not get the baked goods out of it. Cupcakes do not react well to sudden changes in temperature - they can settle. After the oven has cooled down, take out the pastries and carefully remove them from the molds.
9. Decorate ready-made muffins with powdered sugar.
Cupcakes look beautiful and appetizing, the top of which is filled with liquid chocolate, fondant, chocolate or white icing, sweet syrup.

We take the eggs out of the refrigerator and rinse them in water to remove contamination. Then break them into a bowl and whisk lightly.
Add a glass of sugar to the beaten eggs and stir for 30 seconds. It is not necessary to whip strongly, because there is no particular need for this.
Sugar and eggs are slightly beaten, add mayonnaise to them. I have a mayonnaise weight of 220 grams in a jar (washer). I also had to add 30 grams from another can to get the weight - 250 grams.
Mix the mass until the lumps disappear.
Mayonnaise is mixed with sugar and egg into a homogeneous mass, now let's add flour.
I add flour in portions of 2 tbsp. spoons. It is so convenient for me to mix the dough - no lumps form.
I sift the flour through a small strainer, tapping the edge with my hand. This method is simple and quick - I like it.
On the third strainer, i.e. at 6 st. add vanillin to a spoon. It seems to me that it is at this moment that vanillin will disperse well in the dough. And then we continue kneading the dough until all the flour is over.
Ultimately, we should have a pouring dough, which should resemble thick sour cream.
Chopped nuts, raisins or cocoa can be added to this dough. Just pay attention to the amount of flour. It may need to be added for 2 tbsp. spoons less.
I always say that flour should be added in portions, gradually.
Now let's get down to the final stage - preparing the soda.
Soda should be added to the dough last, so as not to disturb the structure of the dough by frequent stirring.
We take a container into which we pour 0.5 teaspoon of soda. Then we need 1 teaspoon of 9% vinegar, which we fill with soda. During extinguishing, foam rises, so choose a container that is not very small.
The soda has been extinguished and now you can add it to the dough. Mix everything slightly and leave for 5 minutes to rest.
Soda promotes the formation of bubbles in the dough, thereby creating holes inside the product during baking.
The dough is rested. Prepare muffin tins and pour into each dough two-thirds of its height. My molds are small, so the dough takes 1.5 tbsp. spoon.
If you have silicone molds like mine, then you do not need to lubricate them with oil - the dough will not stick.
If the molds are made of iron, then they need to be greased with margarine or sunflower oil.
We put the filled forms in a preheated oven and bake for 20 minutes at a temperature of 220 degrees.
Tip: This baking temperature is suitable for those who have electricity in the network strictly adhered to at 220-240 degrees. If the voltage is below normal or higher, then you will need to experiment with the temperature. Either add it or, on the contrary, subtract it.
It took 20 minutes, but you may have more (remember the temperature), but so numb, as soon as you see that the cupcakes have begun to turn red, pierce them with a toothpick or a match without sulfur. If it remains dry when removing the stick from the dough, it means that the pastry is ready and it is time to take it out of the oven.
I usually lay out the finished baked goods on a wooden board, which I cover with a napkin and let them cool down. Once the muffins have cooled down, it's time to put them in a bowl and serve.
