Turkey with apples in the oven

For a festive table, cook a turkey in the sleeve. Such a dish looks very colorful if you serve the whole finished carcass.

The dish is prepared according to the following scheme:

  1. You will need a large bird, weighing about 4–6 kg. If the turkey is frozen, it will take about a day to defrost it. Scald the inside of the washed bird with boiling water. Dry it with napkins.
  2. Combine salt, pepper, oil and seasonings. Rub the inside and outside of the carcass with this marinade. Wrap it in parchment paper and refrigerate overnight.
  3. Cut apples into quarters and core. Add the whole pitted prunes and stir. Stuff the turkey loosely with these fruits. Fasten the belly with toothpicks so that the filling does not fall out. The abdomen can also be sutured.
  4. Brush the carcass with olive oil and slip the sleeve over it. Tie it tightly and place in an oven preheated to 190 C. Place the bird exactly in the center. Bake for about 3 hours. If necessary, the temperature can be reduced to 170 C. On average, 1 kg of weight will take 50 minutes.
  5. Place potato tubers on a baking sheet 1 hour before cooking. Also bake the filling of apples and prunes, which does not fit, with a bird.
  6. Open the sleeve 30 minutes before the end of cooking. This will brown the carcass.

Serve the whole carcass at once, garnished with potatoes, baked apples and prunes.

Turkey fillet with apples

To prepare this delicious dish, you will need the following products:

  • turkey - 400 g;
  • onion - 1 pc .;
  • apple - 1 pc.;
  • soy sauce - 1.5 tbsp. l;
  • olive oil - 3 tbsp. l .;
  • curry - 1/5 tsp;
  • salt;
  • black pepper.

Use ready-made poultry spices if desired.

Prepare the dish as follows:

  1. Cut the turkey into rectangular pieces.
  2. Mix oil with soy sauce and leave the meat to marinate.
  3. Cut the apple into cubes, onions into half rings. Fry the onions in a skillet. Add the turkey and marinade to this. Cook for 8-10 minutes.
  4. Add apple, salt and spices. Cover the pan with a lid and simmer for another 10 minutes.

  • soy sauce - 35-40 g
  • garlic - 5-6 cloves
  • lemon juice - 2 tablespoons
  • mayonnaise (preferably yogurt or sour cream) - 30 g
  • bay leaf - 1 pc.
  • prunes - 6 pcs.
  • coriander - 2 g
  • rosemary - 3 g
  • ground black pepper - 2 g
  • sea ​​salt - 2 g
  • vegetable oil - 10 g
  • thyme - 5 g

How to cook:

    Start by making the marinade. In a deep glass container, add the spices of thyme, spicy coniferous rosemary, piquant coriander, also add pepper and a small pinch of sea salt. Pour in the honey.

    Now add the mayonnaise. Cut the peeled garlic cloves into thin slices, transfer to a bowl with the rest of the ingredients.

    Season the marinade with lemon juice, pour in the amount of soy sauce and stir.

    Rinse a fresh piece of turkey fillet under cool running water. Dry kitchen towel... Since we are preparing stuffed fillet, then make deep cuts in the meat, with an interval of about 1.5 cm, as in the photo.

    Place the resulting "accordion" in a deep plate. Pour the cooked marinade over the turkey, add the broken lavrushka, leave at room temperature for 1.5 hours.

    After a while, the meat was slightly marinated. Transfer it to foil.

    Wash the sour apple, remove the seeds and cut into slices. Fill the fillet with these slices.

    Put the whole prune berries there. Remember to rinse them thoroughly before doing this.

    Pour the marinade over the meat, wrap it tightly in several layers of foil. In a hot oven, lower the temperature to 170-180 degrees. For the first 45 minutes, bake the turkey in a sealed form, then open the foil, pour the resulting juice over the meat, cook for another 10-15 minutes.

Turkey meat with apples and prunes goes much better than chicken fillet. In the recipe, the spices are well chosen, each component complements the flavor spectrum of the dish, and does not interrupt it. The meat is tender and juicy due to the excellent marinade and fruit "pocket". It is better not to chop the garlic, but to crush it (this way its aroma will fully unfold). It will be delicious if you add a little orange juice to the marinade, and put citrus slices peeled from films into the cuts. Pierce the turkey with a thin knitting needle to make sure it's done. If a clear liquid comes out of the hole, then it is ready, if the blood is raw. Another sign: the meat should be soft and easily come off the bones (this is clearly visible on the legs).
